Green Amaranth

This green amaranth has been enjoying its lone space in this big styrofoam box!!

I am keeping this to get some seeds for future and it is growing bigger and looks much healthier than before (it was crowded out by its soya bean neighbours previously)! I have been picking its leaves for cooking so as not to let them go to waste!
